Orange Oven Poached Spring Salmon
Who said gourmet cooking has to be difficult?
- You need a cup of bread crumbs or finely crunched up crackers.
- Grate the rind of one orange into the bread crumbs.
- Add crushed black pepper, as spicy as you like it.
- Rinse the fish and shake dry – you want it damp, but not dripping.
- Dredge in the crumbs and place on an oiled baking dish.
- In a bowl, juice the orange and add 1-2 tbsp of butter, microwave until melted and stir.
- Pour over the fish.
- Bake at 400 for 15 minutes, until fish flakes easily.
