It's halibut fishing time again, and Jolly Rogers is once again chasing them down on Vancouver Island's west coast. As usual, Port Renfrew's offshore waters are rewarding our efforts, with plenty of tasty halibut hitting the dock. In anticipation of your successful halibut fishing day soon, below I have provided a recipe from a happy customer last year (thanks Kevin!). I don't think this one is "heart smart", but it sure tastes good -- kind of a Thai style flavour.

In anticipation of your successful halibut fishing day soon, below I have provided a recipe from a happy customer last year (thanks Kevin!). I don't think this one is "heart smart", but it sure tastes good -- kind of a Thai style flavour.
Halibut in Coconut Cream
- Cook in tinfoil or a casserole dish with lid.

- Place halibut steaks or filets, small baby potatoes (smaller the better, or they won't cool), bok choy, red peppers, snow peas, red onion.
- Add some chopped and skinned tomatos (or from can is fine, just not too much juice).
- Add some diced cilantro, save a few sprigs for presentation when done.
- Can also add some diced green onions and thin slices of ginger.
- Pour a can of coconut milk on top and juice from one lime.
- Add lemon pepper, salt, chili flakes or powder.
- Cook at 300 for 20 minutes. Poke potatoes with a fork to ensure they are soft.
- Serve on rice.
- Accept compliments on your fishing and cooking prowess.
